Here is an image showing a half-eaten pot of mung beans (one pound) made with two ham hocks and a bundle of spinach. (Valerio Bakery, a Filipino establishment, sells one item for four dollars. That’s too much if you can make your own stew.)
Here is the recipe: Steam pressurize the ham hock in water for 20 minutes. Chop ham hocks into bite-sized chunks. Save water and boil mung beans along with ham hocks. Add salt/pepper/onion for flavoring. Stir occassionally until mung beans are cooked to mush. Add spinach and serve warm over freshly steamed rice.
