
Here is an easy recipe for a type of Filipino meatloaf:
Chop the following ingredients:
-Smoked or sweet ham chunks.
-One cup of bell peppers (red, green and/or yellow).
-One small box of those raisins, soaked in water to rehydrate.
-Three cloves of garlic.
-One cup onion.
-One tablespoon of pimentos.
With disposable gloves, mix ingredients into:
-Three to four pounds of ground pork.
-Salt and pepper to taste.
-Add bread crumbs. Since we ran out of bread crumbs, we substituted dried potato flakes!
-Place one pound of meat loaf into aluminum foil.
-Form into desired shape of loaf – long or short.
-Place one can of sliced Vienna sausages and sliced three to four hard-boiled eggs into “middle” of canal formed into loaf.
-Roll up meat loaf in foil and secure ends.
-Place completed loaves in oven pan.
-Bake in 350 degree Farenheit oven for one hours or until you smell it burning good.
-Cut into desire shapes and serve warm.
-Enjoy.
