Online recipes for cooking and other edible “nom-noms” for people.

  • Baking boneless and skinless chicken thighs

    I had to go online to find out how to bake chicken in the oven. Below is my modified version to support the uploaded images:

    • Smash boneless and skinless, free-range, chicken thighs with meat tenderizer.
    • Smash fresh garlic cloves.
    • Brine for 15 minutes with any combination of the following:
      • Food enhancer (such MSG or Monosodium glutamate)
      • Salt – tablet salt, Kosher salt, sea salt, whatever
      • Soy boi sauce – light or thin, dark, mushroom-flavored sauce, thick, oyster sauce, whatever
    • Spray baking pan with cooking oil.
    • Place wrong side of chicken face skyward into baking dish.
    • Add the smashed garlic atop the chicken and sprinkle with sugar and black ground pepper.
    • Preheat oven 375 degrees F.
    • Cover with foil to seal in the juices. I tuck my foil inward so the steamed juices will recycle back downward into the baking pan.
    • Bake for 20 minutes.
    • Remove foil and flip your chicken to cook another 15-20 minutes.
    • Let your chicken rest, serve, and enjoy.

    My favorite chicken pieces are the dark meats, which are the thighs and drumsticks.

  • Marinating free-range chicken thighs

    Smashed garlic, dried herbs, bay leaf, ground black pepper, and soy boi sauce.
    Smashed (on one/“wrong” side only) boneless and skinless free-range chicken thighs
    Marinate “wrong” side with smashed holes downward and sprinkle garlic salt LIGHTLY over them.

    Cover chickens and marinate overnight. And sear both sides to lock in whatever juices and add water whatever to continue simmer with cornstarch (for shiny thickened sauce) and sugar (for the “real” flavor) for forty minutes whatever. Let rest and serve. Voila! 20190902-1522.

    Here are my notes via the “Memo” app of my smart/cellphone:

    2012/02/06 18:50. We were watching “Hannity on FoxNews“. I noticed Vince Flynn, the author of “Kill Shot” was a guest on the show. When I saw the words “kill shot”, I noticed how the synchronicity of my previous thoughts was about Maw’s arm sling, which I kept referring to as: “sling shot” as a joke. The two words also brought to my mind about the word “assassination” and hopefully not unto moi, of course. With regards to the author’s last name, I recall a commercial about “Anthony Flynn. I am the owner and founder of YouBar.” Notice how Flynn will seem quite “discretely” as messages unto moi. Thank you.

    2012/02/06 11:14. I noticed how the social engineers are putting Obama down while putting Mittens up. This is symbolic within a certain group of people who are influencing public opinions about potential POTUS.

    2012/02/06 10:36. While washing the dish and while listening to a news cable programming on television, I had a thought about how the “conservatives” are using the platform of a dead man, such as Ronald Reagan. Yesterday, Maw told me that I should use my own ideas and NOT copy the ideas of others. So there you go.

    2012/02/06 10:49. I forgot to add one quarter wedge of sliced onion. At 10:46, we dissolved on tablespoon of “McCormick Beef Stew Seasoning Mix” in cold water before adding into the turkey stew for taste.

    2012/02/06 09:25. Maw and then later Paw was chopping ingredients for a turkey stew/soup: some dark turkey meat, four carrots, four celery stalks and about “two pounds” of turkey stock.

    2012/02/06 02:20. At 02:19, I head another single but softer tap somewhere to my right of the mirror to the wooden dresser drawer furniture.

    2012/02/06 01:51. At 01:48, I head a single LOUD thump on the window. At 01:50, I head a soft tap of “paper” near my computer monitor area.

  • Veggie and pompano fish soup…

    At 12:31pm, here are my quick notes during the cooking/boiling of Maw’s “sinigang” soup recipe:

    ~Clean fish yourself or better yet have the butchers remove the fins and innards.
    ~Boil two small “gabi” (or oblong-shaped, taro roots, skinned and sliced vertically in half).
    ~Boil one “handful” of green beans (cut off the stems) with 1.5″ wedge of onion.
    ~Remove green beans and boil (small) Napa cabbage, sliced vertically in half.
    ~Add one tablespoon of “Sinigang” soup base mix (Mama Sita) and fish sauce (Rufina) to taste.
    ~Remove green beans, taro roots and Napa cabbage and set aside in bowl.
    ~Boil one Philippine eggplant, cut into 1″ discs.

    ~Add ONE pompano fish, cut in half (one head section, one tail section).
    ~Add back the green beans, taro root and napa cabbage.
    ~Boil all ingredients, say another 20 to thirty minutes, until fish is cooked.

    Here is an easy recipe for a type of Filipino meatloaf:

    Chop the following ingredients:

    -Smoked or sweet ham chunks.

    -One cup of bell peppers (red, green and/or yellow).
    -One small box of those raisins, soaked in water to rehydrate.
    -Three cloves of garlic.
    -One cup onion.
    -One tablespoon of pimentos.

    With disposable gloves, mix ingredients into:

    -Three to four pounds of ground pork.
    -Salt and pepper to taste.
    -Add bread crumbs. Since we ran out of bread crumbs, we substituted dried potato flakes!

    -Place one pound of meat loaf into aluminum foil.

    -Form into desired shape of loaf – long or short.

    -Place one can of sliced Vienna sausages and sliced three to four hard-boiled eggs into “middle” of canal formed into loaf.

    -Roll up meat loaf in foil and secure ends.

    -Place completed loaves in oven pan.

    -Bake in 350 degree Farenheit oven for one hours or until you smell it burning good.

    -Cut into desire shapes and serve warm.

    -Enjoy.

  • Banana blossoms in coconut milk…

    Here is an easy dish to make:

    ~Fry chopped garlic and onion and sliced ginger in veggie oil until slightly brown.
    ~Add chopped pieces of pork and until slightly brown.
    ~Add shrimp (chopped whole raw shrimp).
    ~Add small amount of water to keep from burning ingredients.
    ~Add salt and/or “alamang” (which is salty shrimp paste) to taste.
    ~Add six cans (13.5 fl oz) of banana blossoms, drained of canned liquid and washed well with water.
    ~Add one can (5.6 fl oz) of coconut milk, shaken first to mix/dislodge coconut pulp from inside the can.
    ~Mix well each time ingredients are added.
    ~Add more water to cook well and reduce water to desired stew.
    ~Serve warm and enjoy.

    Note: This dish is supposed to last a few days, depending on how many are eating this delicious Filipino stew.

  • Stir-fried bell peppers…

    Here is an easy recipe for bell peppers:

    ~Chop garlic and onion.
    ~Chop 1/2 cup of meat stuff (preferably pork).
    ~Prepare 6 pieces of whole shrimp, deveined of course.
    ~Chop green, red and/or yellow bell peppers, and sliced carrots, too.
    ~Slice ginger into strips and white straw mushrooms, too.

    -Fry garlic and onion in veggie oil until slightly brown.
    -Add preferred meat stuff and shrimp and fry until slightly brown.
    -Add water to boil meat stuff until cooked.
    -Add veggie ingredients and flavorings of favorite stir-fired sauce, salt and ground pepper.
    -Stir occassionally, while adding water to “steam cook” veggies further and to avoid burning.
    -Serve warm and enjoy!

  • Tomato egg salad…

    Here is an easy dish to make:

    ~Boil and peel one dozen eggs.
    ~Chop five eggs into wedges of eight pieces each.
    ~Chop sweet tomotoes the size of two tennis ball.
    ~Chop sweet onion to taste.
    ~Add flavoring, such as soy sauce (optional). I prefer salt.
    ~Mix it up and enjoy!

  • Steamed squid…

    Here is a simple recipe for squid steaming inside a large wok of:

    ~Well washed WHOLE squid.
    ~Brown mashed whole garlic cloves and chopped onions in vegetable oil.
    ~Add salt, ground black pepper, rice vinegar, soy sauce and some bay leaves.
    ~Cover and let stream until shrunken and cooked.
    ~Reduce extra water to preference. I like some sauce left over for my rice.
    ~Serve warm. Tentacle eaters enjoy! The more squeemish ones, like me, will opt for the calamari (or body only).
