During the holiday seasons of X-mas and New Day, Maw would cook “arroz caldo,” a type of Filipino porridge made of sweet rice, garlic, onion, ginger, chicken meat, chicken stock soup and pork tripe (boiled TWICE).
The condiment would be fresh onion/scallop, dried minced garlic and salt to taste. I like garlic salt on my porridge. For good luck, boiled eggs are added separately. Chicken egg is common but quail eggs have a better taste.
Each time I eat eggs, I keep thinking about the little babies that would have been born. I imagine them running around, playing, eating and following their parent/s until fully grown. I also feel bad when hunters take their lives for fun, which they call it sports. And that break my heart/a commandment. But no one seems to care about the little ones.
